Nuoc Cham

Vietnam's daily dipping sauce — fish sauce, lime, sugar, garlic, chilli. Kinder than nam jim.

Nuoc Cham

The sauce on every Vietnamese table. Lighter, sweeter, and less aggressively spicy than its Thai cousin, nuoc cham is what dresses your bún bowl, dips your spring rolls, and coats your grilled pork chop. Learn it once and you have unlocked half of Vietnamese cooking.

Method

  1. 01

Dissolve 3 tbsp sugar in 4 tbsp warm water. This 'syrup' is the whole trick.

  2. 02

Add 3 tbsp fish sauce and 3 tbsp fresh lime juice. Ratios: 3:3:3:4 (fish:lime:sugar:water).

  3. 03

Mince 2 garlic cloves + 1 red chilli, add to the sauce.

  4. 04

Optional but classic: a small handful of julienned carrot, shredded daikon. Rest 10 minutes and serve.

Chef's notebook
  • “Nuoc cham is meant to be light — the water is essential. Never skip it.”
  • “For bún noodle bowls, double the liquid and reduce the fish sauce slightly — it should coat the noodles, not dominate.”
